Skillet Honey BBQ Chicken

Skillet Honey BBQ Chicken with Rice

I often get weird cravings out of the blue for meals I’ve never in my life had- and this was one of them. Usually, when that mood strikes, I’ll google similar sounding meals and take a few pointers from a variety of recipes, to come up with something like this skillet honey bbq chicken.

What you need:

  • chicken thighs or breasts (I used 2 of each)
  • long grain parboiled rice (2 cups)
  • yellow onion
  • parsley
  • chicken broth (2 cups)
  • butter 
  • green onion
  • honey
  • BBQ sauce
  • olive oil

1. Preheat oven to 375 degrees

2. Heat oil in a skillet over medium-high heat

3. Salt, pepper and season your chicken anyway you’d like

4. Place the chicken in the heated oil (it should sizzle when you put it down) and sear on each side until golden brown

5. Once the chicken is seared, sauce it up with your desired level of honey vs. BBQ sauce

6. Wrap the seasoned chicken in tinfoil and set aside

6. Add butter and diced onion to the skillet, over medium heat

7. Add in the uncooked rice and stir while the onion softens 

8. Add in the chicken broth and place the chicken breasts on top

9. Cover with tinfoil and bake for 45 minutes (or until rice is crispy and chicken is cooked through)

10. Garnish with green onion and fresh parsley
