Detox Vegetable Soup

Ever since I started adulting, and functioning on an early wake up, early bedtime schedule, my eating routine has needed some serious adjustments. What appetite I lack in the mornings for breakfast, I make up for in the afternoon. Sometime between lunch and dinner (dunch if you will) I become ravenous, no matter what I’ve eaten that day (which admittedly often isn’t much, since breakfast will forever be nauseating to me). After a few weeks of coming home, raiding the contents of my refrigerator, and spoiling my dinner, things began to change. My go-to snack became hummus and pita, but I wanted something even healthier. I was inspired to try making the perfect soup after watching Lauren Elizabeth’s detox chicken soup vlog. I loved the idea, a bowl of healthy, detoxing soup is the perfect thing to hold me over until dinner, but with my picky taste it just needed some tweaking.

I was actually surprised to notice a lot of similarities in LE’s detox soup, as my mom’s OG Eastern European recipe that I grew up eating, that was handed down to her from my grandma. From turmeric, to ginger and lemon, this soup is packed with anti oxidants, immune system boosting, virus fighting goodness. Spice it to your desired level of heat with, onion, garlic, cayenne pepper. If you can handle the spice, spice it up to boost your metabolism and get things moving!

The most important ingredient in my opinion, is the bone broth. My parents always made this at home growing up (by cooking bones and any other meat remnants left behind) and it’s full of flavour, collagen and is effective for joint pain and gut health. You do not need to make this at home HOWEVER do not buy store bought bone broth in a cardboard container, that does not need to be refrigerated. Real bone broth is thick, jiggly and looks jello like in consistency. It has a short, refrigerated shelf life, and absolutely is not produced by Campbell’s. I repeat, DO NOT USE STORE BOUGHT BONE BROTH! Head to your local butcher, make some yourself, or simply skip this step. After all, you’re trying to clean out your system, not load it with chemicals and preservatives.

Veggie Detox Soup

  • 4 cups of vegetable broth
  • 2 cups of chicken broth
  • 2 cups of bone broth
  • shallots
  • carrots
  • celery
  • lima beans
  • corn
  • peas
  • ginger
  • turmeric
  • lemon
