Creamy Chicken and Mushroom Pasta

For someone beyond obsessed with organization and planning, I have a lot of posts about recipes utilizing things going bad in the fridge. Here’s another pasta concoction thrown together, that turned out pretty well!

Mushroom, Chicken & Bacon Pasta

  • Shredded or cubed cooked chicken
  • Bacon (freeze to ease chopping)
  • Mushrooms (sliced)
  • White onion
  • Garlic
  • Parsley
  • Cream
  • Salt
  • Pepper
  • Extra virgin olive oil
  • Parmesan
  • Pasta
  • Flour (to thicken sauce if needed)
  1. Heat pan to med heat and add in chopped, raw bacon
  2. Remove from fat once cooked and set to dry on paper towel
  3. Chop onion and add to bacon grease, cook until softened
  4. Add in the garlic, mushrooms and parsley
  5. Allow to cook until golden brown and
    softened
  6. Prepare your pasta as the mushrooms cook
  7. Lower heat to simmer and add in cream, salt, pepper and grated Parmesan, cook for at least 15 minutes
  8. Drain the pasta, add oil and protein
  9. Top with the sauce and some Parmesan
