Buffalo Chicken Lettuce Wraps

When I stumbled upon a variation of this recipe, I was in heaven. Bite size or shredded meat is really all I’m interested in, and for some reason I love lettuce and sour cream combos a weird amount… My Lonestar fajita trips always start with a chicken fajita, soon replaced by lettuce, sour cream and cheese only fajitas.

These fairly guilt free lettuce wraps will definitely become your next dinner obsession. I promise.

Buffalo Chicken Lettuce Wraps

  • Romaine lettuce leaf
  • Cubed chicken breast
  • Bread crumbs
  • Frank’s Hot Sauce
  • Diced tomato
  • Diced avocado
  • Sour cream
  • Green onion
  1. Preheat oven to 400 degrees
  2. Butter your baking dish or use cooking spray (be generous)
  3. Combine Frank’s, salt and pepper in a small bowl
  4. Fill another bowl with breadcrumbs
  5. Dip your chicken bites in the hot sauce mixture
  6. Roll the chicken in the breadcrumbs until covered evenly default
  7. Bake until cooked through
  8. Top lettuce leaf with chicken, tomato, avocado and drizzle with sour cream

Tip: I marinated my chicken bites in Frank’s for 24 hours before cooking
