Parmesan Chicken with Spaghetti

  • Chicken breast
  • Mozzarella cheese
  • Parmesan cheese
  • Yellow onion
  • Tomato sauce
  • Tomato paste
  • Italian bread crumbs
  • Eggs
  • Flour
  • Basil
  • Oregano
  • Olive oil
  • Salt
  • Pepper
  1. Preheat oven to 400 degrees
  2. Grate 1/2 the onion and heat over medium-high heat
  3. When onions reach simmering point, reduce heat and tomato sauce
  4. Add in oregano, garlic, salt, pepper and tomato paste
  5. Remove sauce to side and heat 1/4 olive oil over medium heat
  6. Combine bread crumbs with finely grated Parmesan cheese
  7. Dredge chicken breast in flour, egg, bread crumb mixture
  8. Pan sear the chicken breast until golden and crispy img_9003.jpg
  9. Spread majority of tomato sauce on bottom of baking pan
  10. Place 2 basil leaves underneath each chicken breast
  11. Top with tomato sauce, chopped basil and mozzarella
  12. Bake until chicken is thoroughly cooked through and cheese is golden brown
  13. Serve with spaghetti and grated Parmesan on top
